Deborah Pinheiro Dick RESUMO O Resveratrol é um polifenol, e é encontrado em alguns vegetais, como frutas e legumes. A importância deste produto reside no fato de ter sido constatado e comprovado que se trata de uma substância com propriedades fitoterapicas de importância na prevenção de doenças cardíacas, de hipertensão e da proliferação de células cancerígenas. Em uvas é encontrado em concentrações relativamente altas, principalmente em uvas tintas. A ocorrência não é uniforme, variando de uma variedade a outra. Na mesma varietal a ocorrência também não é uniforme, havendo diferenças significativas. Fatores diversos poderiam influenciar na concentração de resveratrol em uvas. As características químicas do solo influenciam na qualidade da uva e, portanto podem influenciar na concentração de resveratrol. 0 presente estudo se propõe a avaliar a influência da classe de solo e de suas características químicas no teor de resveratrol em uvas e vinhos. Foram escolhidos solos do Vale dos Vinhedos, Bento Gonçalves, para determinação das propriedades químicas, assim como, as uvas dos mesmos para vinificação e determinação do teor de resveratrol. As varietais escolhidas foram Cabernet Sauvignon, Cabernet Franc e Merlot. As análises das principais características do solo foram feitas no Laboratório de Solos da Embrapa Uva e Vinho. A concentração do teor de resveratrol foi determinada por cromatografia líquida de alta resolução (HPLC). Os resultados mostraram não haver uma correlação significativa entre classes de solos e as propriedades químicas do solo com o teor de resveratrol em vinhos. Exceções foram observadas para a matéria orgânica, o teor de alumínio trocável e de ferro oxalato na varietal Cabernet Sauvignon e a glicose na varietal Cabernet Franc. 0 teor e a taxa de liberação de resveratrol no vinho foram superiores no varietal Merlot. Este comportamento nao foi explicado por nenhum dos atributos químicos do solo analisados.

Deborah Pinheiro Dick SUMMARY Resveratrol is a polyphenol found in some vegetables, fruits and legumes. The great significance of this product is due to its phytotherapic properties, since this substance acts against heart diseases, hypertension and proliferation of cancer cells. Its contents in grapes are relatively high, especially in red grapes. Nevertheless, its occurrence is not uniform among the different grape varieties and can vary broadly. Concerning a given grape sort the resveratrol content can also be very different, which indicates it depends on several factors. The soil chemical properties can affect the grape quality and probably this may affect also the resveratrol content. This study aims to evaluate the influence of soil class and soil chemical attributes on the content of resveratrol in three wines of different grape sorts. Soils from the Vale dos Vinhedos in Bento Gonçalves were chosen, and the selected wine sorts were Cabernet Sauvignon, Cabernet Franc and Merlot. The analyses of the soil chemical attributes were performed at the Embrapa- Grape and Wine, in Bento Gonçalves. The resveratrol content in wines was determined by high performance liquid chromatography (HPLC). The obtained results showed that no correlation exists between soil class and resveratrol content in wine. Concerning the soil chemical attributes, a statistically significant correlation with the resveratrol content was found only with the content of organic matter, exchangeable AI +3 and Feo in the Cabernet Sauvignon wine, and with the glucose content in the Cabernet Franc wine. The resveratrol content after 22 days of fermentation and its liberation rate were greater in the Merlot wines than in the other ones. This behavior could not be explained by any of the soil chemical attributes or soil classes considered in the present study.
